Bengaluru Food Safety Raids Expose Unhygienic Conditions at Top Hotels

The Food Safety and Drug Administration recently conducted a citywide enforcement drive across Bengaluru, uncovering severe hygiene violations at several prominent establishments, including three-star and five-star hotels. A total of 30 inspection teams checked 26 upscale hotels, seizing food samples for laboratory testing and exposing unhygienic kitchen conditions that have sparked widespread concern among local consumers.

During the surprise inspections, officials discovered expired food, rotten meat, fungal growth on vegetables, and unhygienic storage facilities across the city. The inspections also uncovered violations such as improper food labelling, inadequate separation of vegetarian and non-vegetarian items, and the storage of expired milk, meat, seafood, bakery products, and vegetables.

The findings at high-end hotels have raised serious questions about food safety compliance in cloud kitchens, which operate exclusively for delivery without public dining areas where customers can assess hygiene conditions. With the growing number of delivery-only food businesses in Bengaluru, consumers are now seeking clarity on whether such kitchens undergo regular checks, licence verifications, and food-safety registration audits.

Local residents, including IT professionals and parents who rely heavily on online food delivery, pointed out that consumers currently depend on delivery platforms, online ratings, photographs, and reviews to make choices. Vaishnavi, an IT employee who frequently orders food online, stated that cloud kitchens remain completely hidden from the public, making regulatory oversight essential through surprise inspections rather than waiting for customer complaints.

Consumers are also calling for greater transparency from food-delivery platforms, arguing that intermediaries should actively verify whether listed kitchens comply with basic food-safety requirements. They requested that information regarding a kitchen's licence and registration status be clearly displayed on delivery apps alongside customer ratings.

Former cloud kitchen employees noted that food safety risks exist across the entire chain, from procurement and receiving of raw materials through storage, thawing, preparation, cooking, cooling, packaging, and dispatch. They emphasised that maintaining strict temperature controls for perishable foods, segregating raw and ready-to-eat items, ensuring proper waste management, and enforcing pest control require continuous daily compliance rather than one-time licensing.
